a bit about our process

Popcorn is a type of corn that has a kernel that maintains a small amount of moisture within the kernel. When the kernel heats up, it bursts causing the kernel to become a piece of popcorn. This reaction is what separates popcorn from other types of corn such as sweet corn. 

We grow much of our popcorn seed on our farm. A white butterfly that pops delicate little tufts of popcorn that are great for flavors such as pure and simple and white cheddar. And, we have mushroom popcorn which when popped is big, billowy, and fluffy. It’s ideal for candy coating or coating with thicker cheeses and toppings.

Popcorn, much like other types of crops prefers, well-drained soil that is also rich in nutrients. It enjoys being direct seeded or planted directly into the ground when the temperatures maintain above 60 degrees. 
The better the pop, the longer the crop was allowed to mature. We take pride in making sure that our popcorn fields are adequately dried before we harvest the seed. Mature ears of popcorn have plump, hard, shiny kernels and dry husks. The ideal moisture content in a mature seed is around 15%, this allows for enough moisture for a seed to pop.

To maintain the desired moisture content in our freshly harvested popcorn ears we shuck the kernels off and store them. Removing them from the kernels and storing them in airtight containers until we are ready to pop them ensures that they don't dry out any further.

When a bucket of popcorn makes it from storage to the kitchen it is popped by our knowledgeable staff. We then coat it in our tumbler or caramelizer before bagging it up and sending it out to a market near you!
